Another week’s worth of kid-friendly dinners to keep you out of the drive thru!
Tonight is a prime example of how meal planning keeps me sane – and out of the drive thru. My oldest daughter has cross country this evening. Then immediately after, both of my daughters have Girl Scouts. It would be SO EASY to hit up the drive thru for dinner. But I’m NOT going to do that. Because I already have dinner planned and prepped and ready to go.
Meal planning not only gives me peace of mind that dinner is taken care of. It also helps me provide healthy meals, even on our busiest nights.
And on nights like tonight, when lots of energy is being burned, I just want my kids to eat and eat well. I don’t want a fight. So I plan easy, kid-friendly dinners that I know they’ll enjoy.
This week’s kid-friendly menu features some of our regular favorites (mac and cheese, pizza, and a twist on burgers and fries). I always like to include some more grownup flavors as well, but still keeping it kid-friendly. So I picked baked chicken legs with sauteed Brussels Sprouts (from my own actual menu because this is one of my personal favorites!), chicken and dumplings, and smoked sausage with potatoes and veggies. YUM!
The baked chicken legs and sauteed Brussels sprouts is so easy that I can’t even call it a recipe. That’s my kind of weeknight dinner! Even though it’s an easy meal, it does take some time. But it’s waiting time (while the chicken bakes) so this is a good one for an evening when you have a lot to do around the house. (I often use this time to fold laundry or clean the kitchen!)
