Kid-friendly meals are a lifesaver on busy weeknights. Especially when you plan them ahead and don’t have to think all day about what you’ll make for dinner. Bonus points for healthy dinners that kids love!
This week’s kid-friendly meal plan includes some old school favorites, like spaghetti and meatballs, cheese enchiladas, and chicken tenders with mac and cheese. (Have you noticed a pattern with my kid-friendly meal plans and mac and cheese?? Because that is not by accident! 😉 )
As usual, I also made sure to include some kid-friendly versions of adult favorites too. This week, you can look forward to chicken hummus naan wraps (anyone else love hummus?), Minestrone soup (in the Instant Pot for the win!), and French Dip sandwiches.
I’m sharing another recipe of my own this week. It’s my super easy and amazingly delicious garden salsa. I posted it on Instagram with three ways to vary the hotness (including an option for EXTRA MILD) and some mix-in ideas to add a little extra somethin’. I like extra, extra, EXTRA cilantro. But hey, if you hate it just leave it out. It’ll still taste great! This salsa tastes best after it sits for about a day in the refrigerator, so try to make it the day before.
Many of these dinners pack really well for lunch the next day too, so no excuses for hitting up fast food!
