Meal planning is my favorite way to stay on track with healthy weeknight dinners. It’s so easy to hit up takeout when you’re running from here to there! The key is to plan easy dinners that don’t take a ton of time!
Even though we’re avoiding fast food dinners, we do still enjoy drive-thru inspired meals. 😉 So this week’s meal plan includes a vegetarian take on Chinese takeout — General Tso’s Cauliflower. Serve it with brown rice (or veggie fried rice!) and veggie spring rolls for maximum craving satisfaction! Yum!
If you’ve seen my other meal plans, you might notice a trend with comfort foods. We love comfort foods at our house, so we have them at least once or twice for dinner. This week, it’s mushroom stroganoff, potato leek soup, and mac and cheese stuffed acorn squash. (Macaroni and cheese makes a frequent appearance too – especially in my kid-friendly dinner plans! What can I say, out love for mac and cheese runs deep. 😉 )
You’ll see a few other international flavors in this week’s meal plan. Tomato cucumber Greek pasta salad for an easy make-ahead weeknight meal. Just wait to combine prepped ingredients right before you serve. Then on Friday night, spinach and mushroom quesadillas with salsa (and let’s be honest – lots of tortilla chips).
