Get inspiration for your vegetarian meal plan with this week’s worth of dinners!
We’ve got another busy week with birthdays, practices, Girl Scouts, and all. the. homework. So I’m looking for fast, easy dinners that are still homemade and healthy. There are basically two ways I achieve this: with quick and easy recipes OR with freezer friendly recipes.
I know there are other ways to get healthy, homemade dinners on the table fast. But those are my two favorite ways. Mostly, I think, because recipes that fit those categories are generally pretty easy to find! Recipe bloggers tend to put keywords like ‘fast’, ‘easy’, ‘make-ahead’, and ‘freezer’ in their titles, so a quick search and I’ve got tons of options at my fingertips.
Monday’s dinner is seriously quick with a total prep + cook time of 15 minutes! You’ll need to roast the broccoli ahead to get dinner on the table that fast. But I’d just do that on Sunday afternoon and have it ready to go for Monday. That’s another way I like to make things easier on busy evenings — get as much preparation and cooking done ahead of time as I can.
Tuesday night is sandwich night (I’ll make the chickpeas Sunday as well). Then pop some burritos out of the freezer for another quick dinner Wednesday. Thursday’s dinner of spinach cheese pie takes a little prep, but then it’s in the oven for 30 minutes. You can use that time to multi-task and focus on your to-do list.
Weekend dinners will be fast and simple this week too. Friday’s Eggplant Parmesan is a recipe from my friend Alyssa at Good + Simple (her recipes are fantastic – go see for yourself!). Stuffed zucchini boats make for a simple Saturday night dinner. And these are nice and hearty with quinoa and lentils! Finally, baked penne for some comfort food Sunday night. Bonus: these individual portions make packing leftovers super easy!
