More inspiration for your vegetarian meal plan!
It’s another busy week in the Bailey household! With TaekwonDo, Girl Scouts, Swimming Lessons, and PTA, it would be so much easier to just do takeout. Even just a couple of times. But I’m not going to fall into that trap! Because I know myself, and I know if I grab takeout once or twice I am so much more likely to succumb to the temptation more and more until it becomes a bad habit.
The thing is, I actually really enjoy eating out. Whether its takeout we bring home to enjoy, or sitting down to a meal at a restaurant, I just like it. I like that we can all pick what we want (no fighting about who doesn’t like what). And let’s be super honest – I really like that I don’t have to do any of the work – especially cleanup!
To compromise, I’m making a meal plan with easy meals that don’t feel like a ton of work and meals that reduce dinnertime fights with my kids.
First up, Chickpea, Cashew, and Broccoli with Garlic Sauce. This dinner might get some whines, but it’s FAST. Total time to get it on the table: 20 minutes! Can’t beat that. Plus, it’s already got my stomach growling.
We’ve also got pumpkin mac and cheese and alphabet soup with grilled cheese on the menu. And while this is primarily intended to appease my kids, the grownups will love it too. 😉 This pumpkin mac and cheese takes a little longer to make, so I’ll prep it in the afternoon, then pop it in the oven later.
Enchiladas with Spanish Rice make an appearance to curb my craving for my favorite local Mexican restaurant. And we’re going to be adventurous and try Keto Cauliflower Falafel Burger. We’re not Keto, but this recipe sounds super yummy so I’m going for it!
Over the weekend, we’ll carb it up with Garlic Avocado Pasta and Copy Cat Trader Joe’s Harvest Chili. I love me some avocado and will probably toss some in the chili too.
